Eggs: best three recipes EVER (not biased whatsoever)

I’m admitting it now (actually in yesterday’s insta post) that I LOVE eggs. Lucky me was able to grab some farm fresh eggs from Kait @ Habits of a Modern Hippie and am feeling so grateful!

My childhood memories of summertime visits at my relatives’ farms in rural China, and eating the freshest of foods are bringing me ALL the feels.

But at the same time, these memories don’t really ring of sunshine and rainbows when it comes to mini Gracie attempting to collect eggs for the folks. As in, I was chased by the ducks and geese and it was SCARY AF!

TBH this love for eggs, seriously, has been going on forever.

I’m probably a stage 5 clinger, but it’s fine.

Let me geek out for a millisecond

You guys know how water is the universal solvent? I feel like eggs are the universal solvent of the food world, like it is the vehicle for bringing ingredients from point A to point B. It’s next level stuff.

(^^That made sense in my head as I was typing but LEMME KNOW if it doesn’t. Some things sound better when left unsaid.)

SO, when it comes to making food.. easier is better. ALWAYS.

Whole foods, real flavors, all the goodness.

Here are my top three fave egg recipes that are so delicious and so easy. You’re missing big if you skip out!

Avocado & Eggs Bowl

One of my all time favorites, but instead of cubing my sweet potatoes I mash up a baked sweet potato as a base. I then load it up with two fried eggs (sunny side up, ofc.), sautéed spinach, half an avocado, and dump some salsa and Siracha sauce on top.

 

Banana Egg Pancakes

Literally you cannot go wrong with these banana egg pancakes. TWO EGGS, ONE BANANA! Y’all already know how I feel about bananas.

Although not listed in this particular recipe, I always sprinkle cinnamon into the batter to spice things up, then spread some ghee on top. And if you don’t like bananas, sub for mashed sweet potato, pureed pumpkin, or pureed butternut squash.

Call it a day my friends, you’ll be in heaven with these.

Avocado Egg Salad

When in doubt, have some sort of avocado & egg combination. I swear you can’t go wrong with the two! For this particular combo, I don’t use a recipe, but this is the closest one I could find to what I usually make. If you want some extra superfood action (I know I always do), add some turmeric powder, cracked black pepper, and ghee. Having the black pepper and ghee will help activate the powers of turmeric.

Now go do all the things with your eggs and have fun!
